So I'm two days in to eating vegetarian and its harder then I thought. I'm not craving meat or anything but I am finding it hard to balance out my meals. I think I could live on carbs, yes I'm a carb-a-holic but that isn't healthy for anyone.
Today I had to be a little more creative with my foods since I had to bring a lunch to work. I made myself a veggie sandwich, which did include cheese. I had baked some oatmeal cookies and had some fruit. Supper was a little more tricky but I landed up with stuffing, carrots, baked beans and jello. Merlin on the other hand has been eating Indian food. I tried my hand at channa saag or chickpeas and spinach. I'm going to have to prepare a new dish for his lunch, but he seems happy eating his Indian veg food.
So day 3 is around the corner, and I'm hoping it will become easier as we go along.

Good luck! I've been considering going veg. I have been eating veg since I arrived in India two months ago and I really like all the different varieties you can get with Indian dishes.

Just wondering how you felt about the overall experience?
I, myself couldn't imagine going only veg but a day or two at a time might be a bit 'fun'.
